******************************* MAHI MAHI FISH TACOS 2 Nice thick fillets of Mahi (about 2 lbs) Blackening seasoning Iron skillet 2 tablespoons of oil Rub blackening seasoning on top side of the MAHI fillet Heat pan on med high for about 3 minutes and then Place fish in face down and cook until almost done. Flip over And finish cooking for about 2 minutes, Set your fish aside and let rest. 6 large floured tortillas “I like the tomato and basil flavored ones” 2 diced tomatoes 1 diced avocado 1 jalapeno Sour cream Shredded lettuce Shredded cheese, you may use pepper Jack or any cheese you like. Also you may use any veggie you like. Play with it and do whatever tickles your pickle !!!! Take your tortilla and place your flaked up fish on bottom And then layer the veggies and put cheese and sour cream on top. Roll up the tortilla up and chow down. You may use any fish of your choice.
